In Flight catering by adä: While operating our New York flagship restaurant, we were approached by Jet Airways to establish and operate a facility at Newark airport to provide cater their in flight food for flights to India. Now that we have secured the Jet Airways contract, our newly built, FDA Approved and Certified commissary will serve multiple purposes. Providing food for the airline industry, serve as a commissary for our revolutionary fast food concept Earth Ovens™, allow us to get into supermarkets with our product line and, lastly serve as a commissary for our Tea Concept “Chaiwala” to compete with Starbucks.

Fifteen years ago, a revolutionary concept was launched after years of development: A fine dining Indian restaurant to rival the fine dining cuisines of restaurants such as Jean Georges and Daniel in order to truly showcase Indian food. The critics said it could not be done. Today adä stands the only Indian Restaurant in the world with the coveted “Five Star Diamond Award”.

The visionaries behind adä now plan to construct another first: A late night lounge with an Indian “Tapas” menu. After its launch at The Panaché, adä will expand to sites in select major city internationally, each backed by prime real estate in their respective locations.

Less than a year old, Adä has clearly become the best Indian restaurant in New York City (or the Western World for that matter) but should really, in fairness, be judged against luxury establishments in the class of Jean-Georges or Lespinasse amongst whom its exciting and innovative cuisine would hold its own. This is not "fusion" cuisine. Chef Rana uses Indian ingredients and Indian cooking techniques to create a personal style that would seem innovative in New Delhi itself. Little expense was spared on the decor which is spacious and avoids the design clichés of the typical Indian restaurant. Creative cocktails are the specialty of the bar including one made from watermelon that we had recently and was delicious. Take care. The cocktails are large and a single gimlet on an empty stomach can put you under the table. There are $40, $50 and $60 pre-fixe menus (the $40 menu is vegetarian) but you may skip around between them if you wish. If they offer you a tasting menu for the whole table, it will be fabulous, but be sure to ask the price in advance or you will be dismayed when you receive the check. Dishes that I never fail to order are the White Pea Cake and the Ginger Mint Lamb Chops. The Naan breads are mind-blowing. One of the owners takes a special interest in wine and the eclectic list features bottles that go well with the food. The food has a mild "kick" to it but is never so hot as to upset a Western palate or blot out the taste of your wine. Adä is at 208 East 58th street, 212-371-8182
